4.- Fritada: A traditional dish from the Ecuadorian highlands. It consists of chunks of pork cooked in its own fat and then fried until golden brown and crispy. It is served with a variety of side dishes such as mote (cooked corn), potatoes, fried plantain, and onion salad.


This food is top-notch! It's pure fire. The fritada is pork sagra cooked in its own fat. Served with mote and maduro, it's delicious!
